Long time fans of the thick, lush flavours found in Indonesian coffees, we are delighted to be able to work with this meticulously prepared microlot by Wildan and his team at Frinsa Estate.This coffee has something special going on. Processing begins with a standard honey – most of the surrounding fruit removed, and the seeds laid out to dry unwashed. Part way through the drying process, the seeds are mixed with saccharomyces cerevisiae culture and placed into a closed sack for 36 hours. After this short fermentation, the beans return to their bed and finish drying.

This short saccharomyces fermentation helps give this coffee a wonderfully sweet & juicy cup with a really nice complexity. We found loads of green tea, peach & flowers.
